This is a recipe we tried while on vacation this year in Oregon. It is great for Breakfast or Dinner( I am hoping to get it for conferecne morning). I think everyone tried this once when Melanie was here last.
16 slices of firm bread
4oz cream cheese
1 cup brown sugar
1/4 cup maple syrup
1 stick butter
6 large eggs
1 3/4 cups milk
1 tsp vanilla
cinnamon and sugar mix
1/2 tsp cream of tartar
berries and sour cream
Spread 8 slices of bread with cream cheese and cinnamon and sugar mix. Top with other slice if bread and cut in half diagonally. in an 11x17 pan combine brown sugar, butter and maple syrup place in 350 degree oven until bubbling. Place bread in pan over carmel mix. Blend eggs, milk, vanilla and 1/2 tsp cream of tartar. Pour over bread, let sit at least 45 minutes then bake 30-40 minutes. Use berries and sour cream as topping.

Baked French Toast

Enchilada Stuffed Shells
15 jumbo pasta shells
1 lb. hamburger or ground turkey
1 can enchilada sauce
1 packet taco seasoning
1/2 cup refried beans
1 cup shredded cheddar cheese
Cook the pasta. In a skillet cook the meat, drain and stir in seasoning packet, refried beans and enchilada sauce ( I save some sauce to pour over top).
Stuff meat mixture into shells. Place in casserole dish. Cover with remaining sauce.
Cover and bake at 350 for 25 minutes. Uncover and add cheese--cook for 5 more minutes
Garnish with tomatoes, sour cream, olives all optional.
