Freezer zip lock bags
2 eggs per person
cheese
pre-cooked meat(whatever is liked)
veggies (whatever is liked)
-In a big pot bring water to boil
-Meanwhile take freezer zip lock bag mix egg, cheese, meat, and veggies together
-Close zip lock bag making sure all the air is out.
-If there will be lots of bags write names on the bag.
-Eight bags can go in pot at the same time.
-Get all bags done and place in pot for 13 min making sure the egg mixture is submerged under water

Cafe Rio Burrito
Hi- This is not one of the quick, easy ones. But I finally got it from one of my friends and thought I would pass it on. I thought Niki would especially like it. Love ya all!!!
Chicken
2 1/2 lb chicken
18 oz coke (don't use diet but it doesn't matter if it has caffeine or not your preference)
1 cup sugar
one 7oz chipotle chilies or peppers in adobo sauce
1 tsp ground mustard
1 tsp minced garlic
take chilies out of can and put in separate bowl. Clean chilies and chile can with coke, throw chilies away and pour coke and chile juice in blender (try to get as much chile sauce without using water and using only the 18 0z of coke). Put all other ingredients in blender and blend until well mixed. Put both chicken and sauce in crock pot and cook on low for
Café Rio Dressing
1 buttermilk ranch dressing packet (make as per recipe)
2 tomatillos (tomato like vegetable with a husk around them)
½ bunch of cilantro
1 clove garlic
Juice of 1 lime
1 jalapeño (Use the seeds too if you like it spicy. You could substitute a few drops of green
Use a food processor to blend all the ingredients well. Refrigerate.
Rice
1 cup rice
2 cups chicken broth
1 garlic clove
pinch of salt
1/2 cup cilantro chopped
half of 14oz can mild green enchilada sauce
Cook rice and chicken broth together. When done mix all other ingredience together. (I leave some rice out for the kids because they think it is to spicy).
You can put it together anyway you would like, but this is what we do. First we put either black or refried beans on a tortilla shell then rice, chicken, lettuce, avocado, tomatoes, cheese and dressing then we roll up like burrito. We have also made it like a salad, it all taste good so good luck

Cheap & Easy Au Jus Sandwiches
This is the cheap and easy version on a Roast Beef Sandwich.
Deli cold cut roast beef (My family does 1-2 lb)
Hoagie buns
Packet AuJus
Throw deli roast beef into crockpot. Add AuJus and water according to instructions. Ready to eat 1-2 hours.
This is cheaper than doing a whole roast PLUS... you don't have to remember to thaw it!

Spaghetti with a little touch of Pepperoni
Everyone knows how to make spaghetti, however while visiting some friends they added Pepperoni to the spaghetti along with their meat it was delicious. So all you do is make spaghetti how you like it and at the store pick up Pepperoni Sticks cut them up and heat them on the stove and mix in with what whatever else you like. Last night we did sausage and pepperoni and it was quite tasty.
