1/2- 3/4 Lb hamburger
1/2 onion diced
1 16 oz can diced tomato
1 pack bear creek minestrone
8 cups water
1 16 oz can pork and beans
brown hamburger and onion, all everything else and simmer for 30 minutes.
So Good-- makes great left overs!

Easy Minestrone

Orange Nut Break
4 1/2 cup flour
1 3/4 cup sugar
4 tsp. baking powder
1 1/2 tsp salt
1 tsp. baking soda
1 1/2 cup chopped walnuts or pecans
1-2 TBL grated orange peel
2 eggs
1 cup milk
1 cup orange juice
1/4 cup melted butter
Combine flour, sugar, baking powder, salt and baking soda. Stir in nuts and orange peel.
In seperate bowl beat the eggs, milk, orange juice and butter.
Stir into dry ingredients.
Pour into 2 greased loaf pans.
Bake at 350 for 50-60 minutes.
Cool for 10 minutes before removing
1 slice =223 calories, 1 g fiber, 5 g protein, 35 g carbs
This doesn't look like a dinner...but it has enough calories to be. I like to serve it with fruit. My boys would tell you it needs a couple pieces of bacon to go with it!

Crock Pot Potatoes
24oz frozen hash browns
8oz cream cheese
1 packet of ranch dressing mix
1 can cream of potato soup
Place semi-thawed hash browns in the crock pot,(however mine weren't thawed even a little and it turned out just fine:)
In a seperate bowl mix cream cheese, ranch dressing mix, and cream of potato soup together.
Pour over the top of the hash browns and cook on low for 6-7 hours.
