Enchilada Stuffed Shells
15 jumbo pasta shells
1 lb. hamburger or ground turkey
1 can enchilada sauce
1 packet taco seasoning
1/2 cup refried beans
1 cup shredded cheddar cheese
Cook the pasta. In a skillet cook the meat, drain and stir in seasoning packet, refried beans and enchilada sauce ( I save some sauce to pour over top).
Stuff meat mixture into shells. Place in casserole dish. Cover with remaining sauce.
Cover and bake at 350 for 25 minutes. Uncover and add cheese--cook for 5 more minutes
Garnish with tomatoes, sour cream, olives all optional.

I am not a fan of leftovers, but I just had one of these warmed up and it was still good!! I am looking forward to Niki cookng this next week. The shells are a nice change from tortillas.
